How to Prepare the "Sultan's Cup"?

Mastic needs special treatment for its flavor to reveal itself:

  1. Put cold water in the Kanaka (coffee pot).

  2. Add one and a half spoons of coffee and sugar as desired.

  3. Stir well before placing it on the fire until the mastic dissolves with the coffee.

  4. Raise it on very low heat. You will notice that the "face" (crema) has become denser and more cohesive thanks to the natural texture of the mastic.
